Wines with a unique flavour
Our wines are made with grapes from our own organic vineyards and winemakers which assist the winery for years and have our same philosophy about growing vines, so the control we have over the grapes that go into the cellar is full, deciding upon the optimum harvest when fruit maturity indicates. All the grapes that enters our facility has been hand-picked and transported in boxes of less than 20 kg to preserve freshness.
The affection to the traditional way of winemaking and our knowledge of the Tinta de Toro variety do we allow our wines fermented with native yeasts that bring the grapes, we don’t use selected yeasts. The only intervention is the temperature control during prefermentation, maceration and fermentation for optimizing the fermentation cycle and that is carried out correctly.
The pumping-over and delestages allow us to extract the color and structure necessary to produce wines that stand out the essence of the Tinta de Toro and makes them wines with a long life ahead, perfect for maturing in oak barrels. Each wine, each harvest, indicates the type of barrel it needs and how long it should remain. This is because the grape is expressed differently each year according to the weather and the treatment he has had.
